Você vai adorar este ragu de cogumelos, um molho que tem um sabor complexo e de cozimento lento, mas que fica pronto em menos de meia hora.</p>

<p class="wp-block-paragraph">É uma refeição fantástica e deliciosa servida com a minha polenta cremosa de grão-de-bico e fubá. Eu incluí a minha receita de <a href="http://chefinhanatural.com.br/polenta-cremosa-de-grao-de-bico-e-fuba/"><strong>Polenta Cremosa</strong> <strong>de Grão-de-Bico e Fubá</strong></a> perfeita, uma receita essencial e infalível para uma polenta amanteigada. </p>



<p class="wp-block-paragraph">Embora a combinação da polenta com queijo coalho e este molho super saboroso, não aparenta ser tão saudável, eu não tenho nenhum problema em rotular esta receita como &#8220;saudável&#8221;. Afinal, a polenta é feita com grãos integrais sem glúten, e o molho é vegetariano, cheio de fibras e rico em minerais.</p>



<h2 class="wp-block-heading">O QUE É RAGU?</h2>



<p class="wp-block-paragraph">Na culinária italiana, o ragu é um molho comum. Um ragu tradicional de estilo italiano é um molho de cozimento lento à base de carne (bovina e/ou suína) servido com macarrão.</p>



<p class="wp-block-paragraph">O meu ragu de cogumelos é tão bom e gratificante, só que é completamente sem carne. Sempre fico surpresa quando faço isso &#8211; os sabores são tão ricos que é difícil parar de comê-lo.</p>



<h2 class="wp-block-heading">INGREDIENTES DA RECEITA DE RAGU DE COGUMELOS</h2>



<p class="wp-block-paragraph">Um dos motivos pelos quais este prato tem um sabor tão delicioso é que ele inclui ingredientes que estão cheios de sabores umami, uma palavra japonesa que significa &#8220;gosto&#8221;:</p>

<h2 class="wp-block-heading"><strong>COMO PREPARAR OS COGUMELOS</strong></h2>



<ol class="wp-block-list" type="1"><li>Escolha cogumelos com tampas firmes e intactas.</li><li>Limpe suavemente os cogumelos com uma toalha úmida se eles estiverem sujos, mas não os mergulhe em água, porque eles ficarão encharcados.</li><li>Corte em fatias ou pedaços de cerca de 2cm para obter o melhor molho.</li></ol>



<h2 class="wp-block-heading"><strong>COMO FAZER O RAGU DE COGUMELOS</strong></h2>



<ol class="wp-block-list" type="1"><li><strong>Cozinhe os cogumelos</strong>: em uma panela grande, refogue os cogumelos fatiados com alecrim ou tomilho fresco e sal até que o líquido dos cogumelos reduza e os cogumelos comecem a dourar.</li><li><strong>Prepare o molho</strong>: na mesma panela, adicione a manteiga ou ghee com a cebola e alho picado e refogue até dourar. Quando a cebola estiver dourada, acrescente a farinha de arroz e em seguida o molho de tomate. Deixe engrossar e então acrescente o vinho tinto, a água filtrada e a noz moscada. Adicione o restante do sal, acrescente os cogumelos e deixe em fogo baixo por 10 minutos.</li><li><strong>Sirva</strong>: Prove e ajuste os temperos conforme necessário e depois sirva o ragu sobre uma <a href="http://chefinhanatural.com.br/polenta-cremosa-de-grao-de-bico-e-fuba/"><strong>Polenta Cremosa de Grão-de-Bico e Fubá</strong>.</a> Este ragu de cogumelos também é incrível servido com macarrão.</li></ol>



<h2 class="wp-block-heading"><strong>TENHO QUE USAR O VINHO TINTO?</strong></h2>



<p class="wp-block-paragraph">Não, você não precisa. Adoro adicionar um pouco, pois o álcool vai realmente queimar durante o processo de cozimento, deixando o molho com um sabor profundo e uma cor mais rica. No entanto, fique à vontade para omitir e adicionar um pouco mais de água ou caldo de vegetais.</p>



<h2 class="wp-block-heading"><strong>POSSO SUBSTITUIR OS COGUMELOS DO RAGU?</strong></h2>



<p class="wp-block-paragraph">Por mais estranho que pareça incluir essa opção em uma receita de ragu de cogumelos &#8211; sei que algumas pessoas podem querer uma opção de ragu vegana, mas alguém na família odeia cogumelos. Não tenha medo, pois você não terá um sabor umami, mas você pode trocar os cogumelos por berinjela e/ou abobrinha. </p>



<p class="wp-block-paragraph">Você também pode adicionar lentilhas ao prato para reforçá-lo. Se você substituir os cogumelos por outro ingrediente, provavelmente precisará de mais temperos.</p>

<h2 class="wp-block-heading"><strong>DICAS PARA RECEITA DE RAGU DE COGUMELOS</strong></h2>



<p class="wp-block-paragraph">Você pode reforçar ainda mais o ragu de cogumelos com outros ingredientes. Meus favoritos são berinjela salteada, abobrinha ou couve-flor ou até adicionar qualquer tipo de carne se desejar.</p>



<p class="wp-block-paragraph">Sinta-se à vontade para reduzir ligeiramente a quantidade líquida usada, para obter resultados ainda mais espessos. Eu sugiro reduzir em 1/4 de xícara. Se você achar que está muito grosso, pode adicionar um pouco mais de água ou caldo.</p>



<h2 class="wp-block-heading"><strong>ARMAZENAMENTO DO RAGU DE COGUMELOS</strong></h2>



<p class="wp-block-paragraph">Guarde as sobras do molho de ragu de cogumelos em um recipiente hermético na geladeira por até 5 dias.</p>



<p class="wp-block-paragraph">As sobras de polenta podem ser armazenadas em um recipiente hermético na geladeira por até 3 dias. Reaqueça com um pouco de leite ou água para soltar.</p>

<h2 class="wp-block-heading"><strong>POSSO CONGELAR O RAGU DE COGUMELOS?</strong></h2>



<p class="wp-block-paragraph">Sim, você pode. Deixe o ragu de cogumelos esfriar completamente e depois transfira para recipientes próprios para o freezer. Congele por até 3 meses. Descongele completamente antes de reaquecer em uma panela em fogo médio.</p>



<h2 class="wp-block-heading"><strong>O QUE DEVO SERVIR COM O RAGU DE COGUMELOS?</strong></h2>



<p class="wp-block-paragraph">Uma salada agradável, simples e refrescante é o acompanhamento perfeito para o ragu de cogumelos. Eu normalmente faço uma salada simples de rúcula com suco de limão.</p>



<p class="wp-block-paragraph">Eu adoro este ragu de cogumelos com a minha polenta cremosa, mas também é delicioso servido sobre uma massa mais larga (como fettuccine) ou purê de batatas.</p>



<p class="wp-block-paragraph">Também adoro servir este ragu de cogumelos com pão quente e crocante. Eu sei, muitos carboidratos, mas não há uma maneira melhor de absorver todo esse molho delicioso!</p>

<p class="wp-block-paragraph">A grande diferença desta receita para a receita de polenta tradicional, é que foi substituído um pouco da quantidade de fubá por farinha de grão-de-bico, trazendo mais proteína e baixo índice glicêmico a essa polenta cremosa. Além disso, com esta receita você pode fazer dois tipos de polenta, a polenta cremosa ou polenta assada e depois grelhada.</p>



<p class="wp-block-paragraph">Polenta é uma receita de origem Italiana, mas eu experimentei a polenta pela primeira vez aqui no Brasil, por ser um prato muito popular aqui. E não foi um amor a primeira degustação, achei que era uma comida sem graça, até que eu fiz esta receita de polenta cremosa de grão-de-bico e fubá.</p>



<p class="wp-block-paragraph">Esta receita de polenta cremosa é incrivelmente fácil de fazer e pode ser feita de várias maneiras, desde polenta cremosa e macia ou até mesmo assada e frita. Independentemente disso, esta receita lhe proporcionará uma polenta perfeita todas as vezes e será um acompanhamento incrível para qualquer prato principal.</p>



<h2 class="wp-block-heading"><strong>INGREDIENTES</strong> <strong>DA RECEITA DE POLENTA CREMOSA</strong></h2>

<li><strong>Água ou Caldo</strong>: O líquido mais básico usado para fazer polenta é água pura. A polenta também pode ser feita com uma mistura de água com leite e/ou caldo. Eu gosto de usar caldo de legumes caseiro.</li>



<li><strong>Fubá</strong>: O fubá grosso ou moído na pedra é o que você deseja para a polenta rústica e autêntica, mas como esta receita não é autêntica, vamos usar o fubá fino.</li>



<li><strong>Farinha de grão-de-bico</strong>: Se preferir, você pode fazer a farinha de grão-de-bico caseira. Para isso, deixe os grãos de molho de um dia para o outro (mínimo de 8 horas) em água suficiente para cobrir os grãos. A cada 500 ml de água, coloque 25ml de suco de limão ou vinagre de maçã. Jogue fora a água do molho e enxágue os grãos. Coloque os grãos em uma assadeira, espalhando-os bem e deixe em forno baixo, 140 graus C até que os grãos sequem. Triture os grãos no liquidificador. Passe por uma peneira e sua farinha estará pronta.</li>



<li><strong>Queijo coalho de búfala</strong>: A receita autêntica normalmente é feita com parmesão, o que eu adoro, mas para tornar esta receita mais saudável, vamos usar queijo coalho de búfala que é mais nutritivo.</li>



<li><strong>Manteiga</strong>: Eu adoro manteiga de boa qualidade como toque final, mas qualquer manteiga sem sal vai funcionar nesta receita. Você também pode usar ghee ou óleo de coco.</li>

<h2 class="wp-block-heading"><strong>COMO FAZER POLENTA CREMOSA DE GRÃO-DE-BICO E FUBÁ?</strong></h2>



<p class="wp-block-paragraph">Para iniciar a receita de polenta cremosa, adicione as farinhas em uma panela grande e leve-as ao fogo baixo, mexendo sempre para não queimar, apenas tostar(dourar) levemente. Pois esse processo é importante para o liberação do sabor, tanto do grão-de-bico, como o do fubá.</p>



<p class="wp-block-paragraph">Em seguida, acrescente o caldo de legumes caseiro aos poucos, e vá mexendo sempre até que a polenta desgrude do fundo da panela. Acrescente o sal, a manteiga ou ghee e o queijo coalho. Ficará na consistência de uma massa cremosa.</p>

<p class="wp-block-paragraph">Espalhe a polenta cremosa, ainda quente, em uma assadeira untada com manteiga e leve ao forno pré-aquecido a 180°C por 30 minutos. Retire do forno, deixe esfriar e leve à geladeira até ficar firme.</p>

<p class="wp-block-paragraph">Higienize as ervas frescas e seque bem. Leve todos os ingredientes para o liquidificador e bata até atingir uma consistência homogênea. Coloque a pasta de sal verde em um vidro com tampa e conserve sob refrigeração por até 60 dias</p>

<h2 class="wp-block-heading"><strong>RECEITA DE CALDO DE LEGUMES CASEIRO:</strong></h2>



<p class="wp-block-paragraph"><strong>Ingredientes</strong>:</p>

<li>2 litros de água filtrada (8 xícaras de chá)</li>



<li>150 g de cebola (1 unidade)</li>



<li>120 g de cenoura (1 unidade)</li>



<li>80 g de folha de alho poró (1 unidade)</li>



<li>60 g de salsão (2 talos grandes)</li>



<li>5 g de louro (2 folhas)*</li>



<li>4 ramos de tomilho*</li>



<li>Talos de salsinha a gosto*</li>
</ul>



<p class="wp-block-paragraph">* Ervas componentes do bouquet garni.</p>



<p class="wp-block-paragraph">Corte a cebola, o salsão, a cenoura e o alho-poró em cubos médios. Adicione todos os ingredientes na panela, ligue o fogo e mexa os ingredientes para que suem rapidamente (em torno de 3 minutos) e adicione aproximadamente 2 litros de água. Coloque a panela em fogo baixo e cozinhe o caldo por aproximadamente 40 minutos, não deixando a água ferver.</p>



<p class="wp-block-paragraph">Para fazer o bouquet garni, utilize o talo de salsinha para envolver o tomilho e louro. Você pode utilizar um barbante ou até um talo de salsão para fechar o bouquet. No entanto, adicione ao caldo faltando 15 minutos para finalizar o cozimento.<br>Desligue o fogo e, se possível, deixe descansar por no mínimo 30 minutos. Em seguida, coe e reserve o caldo.</p>



<h2 class="wp-block-heading"><strong>A POLENTA CREMOSA DE GRÃO-DE-BICO E FUBÁ É SAUDÁVEL?</strong></h2>



<p class="wp-block-paragraph">Em sua forma mais simples, contendo apenas caldo, grão-de-bico e fubá, esta polenta cremosa de grão-de-bico e fubá é relativamente saudável, pois contém uma boa quantidade de fibras e proteínas. Além disso, esta polenta cremosa também tem baixo nível glicêmico, que não aumenta tanto o açúcar no sangue. </p>



<p class="wp-block-paragraph">Nesta receita de polenta cremosa eu usei um queijo coalho de búfala que é mais saudável e nutritivo do que outros tipos de queijos. E gordura (sem exagero) em forma de manteiga, ghee ou óleo de coco para tornar este prato mais saudável.</p>

<p class="wp-block-paragraph">A farinha de milho (fubá) é naturalmente sem glúten, pois não contém trigo. No entanto, como a contaminação cruzada pode ocorrer durante o processamento, as pessoas que são muito sensíveis ao glúten e as que têm doença celíaca devem procurar o fubá rotulado e certificado como sem glúten. Também recomendo usar fubá orgânico devido à transgenia!</p>



<h2 class="wp-block-heading"><strong>COMO SERVIR A POLENTA CREMOSA DE GRÃO-DE-BICO E FUBÁ?</strong></h2>

<h2 class="wp-block-heading"><strong>ARMAZENAMENTO</strong> <strong>DA POLENTA CREMOSA</strong></h2>



<p class="wp-block-paragraph">Armazene a polenta cremosa de grão-de-bico e fubá em um recipiente com tampa na geladeira por até 3 dias. Você também pode congelar esta polenta. Além disso, a polenta cremosa restante é facilmente reaquecida:</p>

<li>Em uma panela, combine 2 &#8211; 3 colheres de sopa de líquido para cada 1 xícara de polenta. O líquido pode ser leite (aveia sem açúcar ou leite de amêndoas também funcionam), nata, caldo, água ou uma mistura.</li>



<li>Mexa para desfazer os grumos, tampe a panela e cozinhe em fogo baixo por 5 minutos, mexendo uma ou duas vezes.</li>
