<p class="wp-block-paragraph">Este bolo Red Velvet Sem Glúten e Low Carb é totalmente natural. Além disso, possui menos de 30% de carboidratos por porção! E para obter a sua tonalidade vermelha, eu usei suco de beterraba ao invés de colorante artificial. A cobertura é livre de laticínios, feita com uma mistura de creme de castanhas de caju, tofu e xilitol.</p>

<p class="wp-block-paragraph">O Red Velvet é um bolo clássico da confeitaria americana e esse bolo sem glúten e low carb é tudo o que você poderia imaginar e esperar de um autêntico bolo red velvet. Essa é a minha receita preferida sempre que quero agradar os amantes de chocolate e aos não-amantes de chocolate!</p>



<h2 class="wp-block-heading">BOLO RED VELVET COM BETERRABA</h2>



<p class="wp-block-paragraph">O red velvet normalmente é feito com corante artificial, por isso tem um tom vermelho profundo. Mas também existem maneiras naturais de colorir este bolo! O método que eu usei para esta receita foi a beterraba assada, batida com água e coada, para assim obter um suco vermelho e intenso.</p>



<p class="wp-block-paragraph">A chave para manter a cor natural do bolo red velvet brilhante é a massa ácida. O açúcar também é bastante importante para fixar a cor, mas esta receita não contem o açúcar.</p>



<p class="wp-block-paragraph">Então ao criar esta receita sem glúten e low carb com corante natural, foi importante descobrir que a quantidade de cacau associada com alguns ácidos, como o limão, vinagre e o iogurte, foram fundamentais para poder chegar na cor do bolo red velvet de forma mais natural.</p>



<p class="wp-block-paragraph">Portanto, embora o meu bolo &#8220;red velvet&#8221; tenha uma cor marrom-bordô, o sabor é incrível e não é afetado de forma alguma pelo suco de beterraba. A beterraba se mistura com o cacau, baunilha e as farinhas. Sendo assim, não tem como sentir o sabor da beterraba e a maioria das pessoas não seria capaz de adivinhar o meu ingrediente secreto desta receita! A beterraba adiciona doçura e umidade natural, o que significa que menos açúcar e óleo são necessários para produzir este bolo macio e úmido, com suave sabor de cacau. O corante natural é sempre um vencedor para mim!</p>

<h2 class="wp-block-heading">BOLO RED VELVET &#8211; SEM GLÚTEN E LOW CARB</h2>



<p class="wp-block-paragraph">Quando se tratou de escolher as farinhas para o meu bolo red velvet sem glúten e low carb, optei por uma mistura de farinha de trigo sarraceno para estrutura, farinha de amêndoas para umidade e fécula de araruta para maciez. Além de adicionar fibras e nutrientes, as farinhas de trigo sarraceno e amêndoas completam perfeitamente os sabores do bolo (sabor do cacau, baunilha, beterraba, iogurte, limão e vinagre). Com todos esses excelentes sabores, posso garantir que este será o bolo red velvet mais saboroso que você já provou.</p>

<h2 class="wp-block-heading">COMO FAZER O BOLO RED VELVET</h2>



<ol class="wp-block-list" type="1">
<li>Em uma tigela misture as farinhas com o cacau, sal e fermento, reserve.</li>



<li>Numa outra tigela adicione a manteiga em textura de pomada e o xilitol já pulverizado. Bata com ajuda de batedor ou na mão, até ficar um creme liso e mais claro.</li>



<li>Aos poucos, adicione os ovos um a um e bata até o creme dobrar de volume.</li>



<li>Adicione o iogurte, as raspas de limão e o extrato de baunilha, continue batendo até tudo ficar homogêneo.</li>



<li>Junte a mistura das farinhas com o creme reservado e adicione o suco de beterraba, o vinagre de maçã e o suco de limão, misture até ficar homogêneo.</li>



<li>Adicione o fermento e mexa suavemente.</li>



<li>Porcione a massa e leve para assar em forno pré aquecido a 180°C e asse por 20 minutos. Este bolo red velvet fica com um aspecto “molhado” e estará assado quando estiver todo firme. &nbsp;</li>



<li>Espere pelo menos 15 minutos para desenformar.</li>



<li>Quando o bolo red velvet estiver completamente resfriado, recheie e decore usando a sua imaginação!</li>

<h2 class="wp-block-heading">COMO FAZER O SUCO DE BETERRABA</h2>



<p class="wp-block-paragraph">Para preparar o corante natural de suco de beterraba, você vai precisar de 2 beterrabas médias, cerca de 300g. Não tem necessidade de você retirar a casca neste momento. Envolva as beterrabas no papel manteiga e coloque numa assadeira. Asse as beterrabas no forno por pelo menos 60 minutos à 180 graus C. </p>



<p class="wp-block-paragraph">No entanto, evite cozinhar em água, pois ferver a beterraba pode desestabilizar a cor. Após assada, a beterraba deve ficar macia, retire a casca e bata no liquidificador com aproximadamente 300ml de água e coe com ajuda de um voal para obter um suco vermelho intenso.</p>

<h2 class="wp-block-heading">RECHEIO PARA O BOLO RED VELVET</h2>



<p class="wp-block-paragraph">Nesta receita eu usei um recheio vegano e sem laticínios. Este recheio é feito com <strong><a href="http://chefinhanatural.com.br/como-fazer-creme-de-castanhas-de-caju-vegano/">creme de castanhas de caju</a></strong>, tofu, óleo de coco, suco de limão, baunilha e adoçado com o xilitol. É um recheio ou cobertura fácil de preparar. É só você colocar os ingredientes da forma que eles aparecem na receita e bater no liquidificador ou no processador. </p>



<p class="wp-block-paragraph">O importante é que você só prepare esse recheio depois que o seu bolo red velvet estiver completamente frio, pois muitas vezes a fixação da cor está diretamente relacionado com esse tempo de resfriamento. Portanto, deixe o bolo red velvet esfriar completamente para você iniciar a montagem!</p>

<p class="wp-block-paragraph">Para fazer o creme de castanha de caju, deixe as castanhas de molho por aproximadamente 6 horas. Descarte a água e lave bem as castanhas. Liquidifique as castanhas com a água filtrada até que vire um creme bem liso. <h2 class="wp-block-heading">MONTAGEM DO BOLO RED VELVET</h2>



<p class="wp-block-paragraph">Após o bolo red velvet estar completamente resfriado, inicie a montagem com uma das bases do bolo, coloque o recheio e repita esse processo. Finalize colocando a cobertura e leve o bolo para resfriar por pelo menos uma hora. Finalize decorando com frutas frescas. Sirva em seguida!</p>

<li>É bem importante assar esse bolo red velvet numa temperatura de média para baixa (170-180°C) e de uma forma bem lenta para não alterar a cor.</li>



<li>Para conseguir a pigmentação adequada deste bolo é importante a combinação do cacau com o suco da beterraba e os elementos ácidos da receita.</li>



<li>Não é recomendado usar muita farinha de amêndoas, pois diminui a capacidade de fixar o corante na massa. Sugiro usar a balança para obter medidas mais precisas! <li>Ao escolher o iogurte para essa preparação se atente a lista de ingredientes, pois é importante que seja um iogurte de boa qualidade e que nessa lista só tenha o leite e fermento, e nada mais! <li>É importante usar todos os ingredientes em temperatura ambiente. Recomendo tirar os ingredientes da geladeira algumas horas antes de começar a receita.</li>



<li>Ao adicionar o ovo para fazer o creme de manteiga e xilitol, pode acontecer uma separação por causa da temperatura do ovo ou até mesmo da tigela da batedeira por ser mais fria que os ingredientes. Isso não afeta a sua preparação, pode continuar com a receita!</li>



<li>Se você não tiver 3 formas ou se o seu forno é pequeno, você pode dividir a receita em 3 e fazer cada camada do bolo separadamente.</li>

<p class="wp-block-paragraph">Esta receita rende um pequeno bolo de 20 cm com 3 camadas, perfeito para cerca de 16 fatias com uma boa quantidade de cobertura. Mas você pode facilmente assar este bolo red velvet em uma forma quadrada de 23 cm. A cobertura deve ser suficiente para um bolo de camada única. Para red velvet cupcakes, encha forminhas de cupcakes até dois terços com a massa e diminua o tempo de cozimento conforme necessário.</p>

<h2 class="wp-block-heading">ARMAZENAMENTO DO BOLO RED VELVET</h2>



<p class="wp-block-paragraph">As camadas do bolo red velvet podem ser feitas um dia antes. Após o resfriamento, embrulhe delicadamente com um filme plástico e deixe na bancada de um dia para o outro.</p>



<p class="wp-block-paragraph">As sobras podem ser armazenadas em um recipiente hermético na geladeira por até 3 dias. *Observação: com o tempo o xilitol usado no recheio pode se cristalizar na geladeira! Se isso acontecer, você pode aquecer o bolo no micro-ondas por alguns segundos, antes servir.</p>
