Embora não seja tradicionalmente vegano, é muito fácil de fazê-lo à base de plantas usando caldo de vegetais, manteiga sem laticínios ou azeite de oliva e parmesão vegano.</p>

<h2 class="wp-block-heading"><strong>COMO FAZER O RISOTO VEGANO &#8211; CREMOSO E SAUDÁVEL</strong></h2>



<p class="wp-block-paragraph">Esta receita de risoto vegano tem duas partes principais &#8211; o risoto com infusão de pesto e os tomates confit:</p>



<ul class="wp-block-list"><li><strong>Para os tomates</strong>: regue os tomates com azeite de oliva, uma pitada de sal e ramos de alecrim. Leve para assar em fogo baixo, 90 a 120 graus por 20 a 40 minutos! Adoro como os tomates cereja assados deixam um sabor profundo, doce e suculento.</li><li><strong>Para o risoto</strong> <strong>vegano</strong>: arroz é infundido com azeite, cebola, vinho branco e caldo de vegetais. Em seguida, terminaremos adicionando o pesto aromático e uma pitada de parmesão vegano sem laticínios.</li></ul>



<p class="wp-block-paragraph">E aqui está como você vai fazer isso:</p>



<ol class="wp-block-list"><li><strong>Aqueça o caldo</strong> <strong>no fogão em uma panela separada</strong> (faça o seu molho caseiro com antecedência). <h2 class="wp-block-heading"><strong>RECEITA DE CALDO DE LEGUMES CASEIRO</strong></h2>



<ul class="wp-block-list"><li>2 talos grandes de salsão&nbsp;</li><li>cebola</li><li>cenoura&nbsp;</li><li>alho poró&nbsp;</li><li>2 folhas de louro&nbsp;</li><li>4 ramos de tomilho</li><li>Talos de salsa a gosto<br></li></ul>



<p class="wp-block-paragraph">Corte a cebola, o salsão, a cenoura e o alho poró em cubos médios, sem perfeição. Em seguida, adicione todos os ingredientes na panela, ligue o fogo e mexa os ingredientes para que suem rapidamente (em torno de 3 minutos) e adicione aproximadamente 5 litros de água. </p>



<p class="wp-block-paragraph">Coloque a panela em fogo médio e cozinhe o caldo por aproximadamente 40 minutos. Desligue o fogo e se possível deixe descansar por no mínimo 30 minutos. Coe e descarte os pedaços dos ingredientes.</p>



<p class="wp-block-paragraph">O caldo de legumes dura até 3 dias refrigerado e 3 meses congelado. No entanto, eu sugiro congelar em formas de gelo ou em recipientes de vidro hermético. </p>

<ul class="wp-block-list"><li>1 xícara (150g) de castanhas de caju cruas&nbsp;</li><li>1/4 xícara (15g) de flocos de levedura nutricional</li><li>1/2 colher de chá de alho em pó</li><li>3/4 colher de chá de sal marinho</li></ul>



<p class="wp-block-paragraph">Adicione os ingredientes ao processador de alimentos e pulse até que atinja uma consistência fina. Armazene o parmesão vegano em um pote de vidro hermético ou saco plástico zip lock na geladeira, onde poderá ser armazenado por semanas!</p>
