Um pão italiano doce, rico e amanteigado, generosamente recheado com frutas secas, pode facilmente ser confundido com bolo! No entanto, é necessário um pouco de paciência para fazê-lo, mas o resultado é tão bom! </p>



<h2 class="wp-block-heading">A ARTE DA FERMENTAÇÃO NATURAL</h2>

<h2 class="wp-block-heading">DICAS PARA GARANTIR O SUCESSO DESTA RECEITA</h2>

<li>Certifique-se de que seu levain esteja ativo! Realmente, muito e verdadeiramente ativo! Eu alimento meu levain por 3 dias consecutivos antes de começar esta receita, apenas para ter certeza de que tenho culturas de fermento e bactérias fortes o suficiente para transportar esta massa enriquecida. Também costumo alimentar o meu levain 3 dias seguidos para reduzir a quantidade de acidez antes de fazer o panetone.</li>



<li>Você precisa de uma batedeira com gancho para massa (adoro <strong><a href="https://semprecompare.com.br/produto/batedeira-stand-mixer-artisan-empire-red-kitchenaid-110v/" target="_blank" rel="noreferrer noopener">Kitchen Aid</a></strong>, mas você pode usar outra marca). E é preciso ter paciência: ligue a batedeira pelo tempo que a receita indicar, isso vai ajudar essa massa rica a crescer e você obterá um miolo fofo e arejado.</li>



<li>Você precisará de um local quente em sua casa (cerca de 25°C) para fermentar a massa. É uma massa fortemente enriquecida que precisa de tempo e calor para crescer.</li>



<li>Opte por ingredientes frescos e de qualidade para garantir o melhor sabor possível.</li>
</ul>



<h2 class="wp-block-heading">COMO FAZER UM LEVAIN 40 % DE HIDRATAÇÃO</h2>



<p class="wp-block-paragraph">Esta receita usa um levain com 40% de hidratação.</p>



<p class="wp-block-paragraph">Misture 20g de <strong><a href="http://chefinhanatural.com.br/fermento-natural-levain/">levain</a></strong> (100% hidratação) com 25ml de água e 40g de farinha. Isso dará 85g de levain rígido, e você só precisará de 70g para esta receita, mas é sempre melhor fazer um pouco mais para permitir exatamente 70g, pois o levain gruda nas laterais da jarra e na colher.</p>

<h2 class="wp-block-heading">GUIA PASSO A PASSO: COMO FAZER PANETONE CASEIRO DE FERMENTAÇO NATURAL</h2>



<h3 class="wp-block-heading">DIA 1: LEVAIN E PRIMEIRA MASSA DO PANETONE CASEIRO</h3>



<p class="wp-block-paragraph">No final da manhã ou no início da tarde, prepare levain rigido (40% de hidratação). Veja as notas acima se não tiver certeza de como fazê-lo. Deixe o levain pelo menos dobrar de tamanho, o que levará de 4 a 6 horas.</p>



<p class="wp-block-paragraph">Assim que o levain estiver ativo e dobrado em tamanho, misture água e açúcar em uma tigela da batedeira. Adicione levain rígido e farinha. Ligue a sua batedeira equipada com um gancho de massa na velocidade lenta, por cerca de 10 minutos.</p>



<p class="wp-block-paragraph">Depois de incorporado, aumente a velocidade. Comece adicionando a manteiga aos poucos e continue sovando até incorporar completamente, por cerca de 10 minutos. Em seguida, adicione as gemas, uma a uma e sove até incorporar bem, por mais 10 minutos.</p>



<p class="wp-block-paragraph">Coloque a massa numa tigela (de preferência uma tigela estreita e de borda alta) e deixe-a triplicar de tamanho, durante 8-12 horas (de um dia para o outro) à temperatura ambiente (idealmente 22-25°C). Tenha paciência e vá mais pelo volume do que pelo tempo, você quer mesmo que a massa dê tempo de crescer.</p>



<p class="wp-block-paragraph">Em uma tigela com tampa, misture todos os ingredientes da mistura de mel e deixe-os na geladeira durante a noite para infundir sabores.</p>

<h3 class="wp-block-heading">DIA 2: SEGUNDA MASSA E ASSANDO O PANETONE CASEIRO</h3>



<p class="wp-block-paragraph">De manhã, use a tigela da batedeira para misturar a farinha e a primeira massa que deverá ter triplicado de tamanho durante a noite. Sove bem por cerca de 10 minutos.</p>



<p class="wp-block-paragraph">Em seguida, adicione o açúcar, a mistura de mel, o sal e a manteiga e continue sovando até incorporar totalmente, por cerca de 10 minutos. Comece a adicionar as gemas, uma a uma, sovando para incorporar totalmente as gemas à massa antes de adicionar outra. Por fim, reduza a velocidade da batedeira ao mínimo e misture as frutas cristalizadas e as passas.</p>



<p class="wp-block-paragraph">Insira 2 espetos de bambu (veja as fotos abaixo) em cada forma de papel para panetone (usei duas formas de 500ml). Você usará os espetos para virar o panetone caseiro de cabeça para baixo, para estabilizar após tê-lo assado.</p>



<p class="wp-block-paragraph">Divida a massa nas formas de papel e deixe fermentar durante 6-8 horas num local quente (cerca de 25-27°C é o ideal para uma segunda fermentação).</p>



<p class="wp-block-paragraph">É importante ressaltar que é aconselhável ir pelo tamanho do panetone. Deixe a massa do panetone caseiro fermentar até que quase dobre de tamanho, portanto, se você estiver fazendo a fermentação em temperaturas mais baixas (20-22°C), pode levar de 18 a 24 horas em alguns casos, para que dobre de tamanho. Basta ter paciência com isso – vai valer a pena!</p>



<p class="wp-block-paragraph">Leve ao forno a 180°C por 35-40 minutos dependendo do tamanho do panetone. Depois de assados, pendure-os de cabeça para baixo por cerca de 12 horas para estabilizar o miolo.</p>



<p class="wp-block-paragraph">Para servir, polvilhe açúcar de confeiteiro para um toque final encantador.</p>

<p class="wp-block-paragraph">O panetone é um produto tradicional das festas de final de ano, mas normalmente, os produtos&nbsp;comercializados tem uma quantidade de açúcar muito grande, aditivos químicos e conservantes. Por isso eu estou propondo a versão mais saudável deste panetone.</p>



<p class="wp-block-paragraph">Esse panetone sem glúten é feito com farinha de aveia. No entanto, a aveia já é um alimento bastante conhecido e normalmente utilizado, mas é importante lembrar que, ela é um alimento naturalmente isento de glúten, pois a contaminação se faz através do processo. </p>



<p class="wp-block-paragraph">Outra informação interessante que eu gostaria de passar sobre a aveia é que ela contém uma espécie de fibra chamada beta-glucana, que quando associado com uma alimentação equilibrada e pobre em gorduras, tem uma resposta muito eficiente na redução do colesterol.</p>

<p class="wp-block-paragraph"><strong>Unir todos os ingredientes</strong>: Misture os ingredientes líquidos com o fermento (esponja) e adicione aos ingredientes secos, mexa com cuidado com as pontas dos dedos. É muito importante a observação da massa, pois conforme a marca ou lote da farinha que você utilizar, pode absorver a hidratação de maneiras bem diferentes, inclusive a umidade do ar também pode influenciar. </p>



<p class="wp-block-paragraph">A massa do panetone sem glúten deve ser fluida, nem líquida, nem densa. O ideal para que ela se acomode na forma sem muita intervenção, somente ajustando a superfície. </p>



<p class="wp-block-paragraph">Portanto, neste passo, você deve adicionar o restante do suco de laranja aos poucos e observar a <meta charset="utf-8">hidratação da massa, se sentir necessidade, adicione um pouquinho a mais de suco.&nbsp;Pois sem hidratação, o fermento não ativa a massa, ela não cresce e se torna pesada e dura, sem leveza e maciez. </p>

<p class="wp-block-paragraph"><strong>Fermentar a massa</strong>: Adicione as frutas secas e distribua a massa dentro da forma de panetone (forma 500g), preencha 3/4 da forma. (Se você não quiser comprar uma forma especial de panetone, você sempre pode usar uma assadeira redonda de 20 cm untada com óleo. Só saiba que o panetone será mais largo do que mais alto). </p>



<p class="wp-block-paragraph">Em seguida, leve para descansar em um lugar escuro e morno para completar a fermentação. Esse processo pode levar de 30 a 60 minutos. O fermento biológico é para agir em no máximo 40 minutos (em temperatura e umidade corretas &#8211; em torno de 26ºC e 75% de umidade) antes do forno. <li>Lembre-se, para que esta receita seja segura para as pessoas com doença celíaca, todos os ingredientes devem ser sem glúten! Certifique-se de comprar farinha de aveia sem glúten. A&nbsp;aveia&nbsp;é um grão naturalmente&nbsp;sem glúten, mas em muitos casos, pode ser processada junto com outros grãos, como o trigo, e acaba sendo contaminada. Sendo assim, não pode ser considerada como livre de&nbsp;glúten.</li>



<li>É importante espalhar bem a mistura, principalmente no fundo, para evitar bolhas de ar e o colapso do panetone sem glúten durante o cozimento. Lembre-se de preencher os moldes apenas até a metade ou ¾.</li>



<li>Pese os seus ingredientes, pois esta é sempre uma recomendação básica para qualquer tipo de panificação ou cozimento sem glúten aqui no Chefinha Natural. Além de ter menos louça para lavar, irá garantir resultados consistentes repetidas vezes. Lembre-se de que o cozimento sem glúten (e particularmente cetogênica) é extremamente sensível, e a medição por xícaras é menos precisa. E se você não possui uma balança de cozimento, meça com copos medidores, deixando cair os ingredientes sobre eles, em vez de retirá-los (o que geralmente leva a uma pesagem excessiva).</li>



<li>Ingredientes à temperatura ambiente. Realmente autoexplicativo, mas incrivelmente importante (especialmente para os ovos). Se você adicionar ovos frios à mistura, o seu panetone simplesmente não irá crescer muito (se é que vai crescer).</li>



<li>Ativar o fermento. Isso envolve a mistura de fermento biológico seco com suco de laranja morno (quente ao toque, entre 40-43° C para ser preciso) e o açúcar por 15 minutos até espumar (fazer uma esponja). E antes de gritar açúcar (!!), lembre-se de que o fermento se alimenta desse açúcar para emitir o dióxido de carbono, por isso não afeta a contagem de carboidratos. E sim, este é um fato científico.</li>



<li>Evite mudanças bruscas de temperatura e correntes de ar. Como acontece com qualquer pão de fermento, neste caso o panetone. Certifique-se de que ele possa descansar sem ser perturbado em um espaço quente. Eu costumo deixar no forno desligado.</li>
