<h2 class="wp-block-heading"><strong>O QUE É TZATZIKI?</strong></h2>



<p class="wp-block-paragraph">Tzatziki é um molho de iogurte, geralmente servido como aperitivo frio ou como acompanhamento. É feito de iogurte e misturado com pepino, alho e sal. Às vezes com vinagre ou suco de limão, azeite e ervas como endro, hortelã, salsinha e tomilho. </p>



<p class="wp-block-paragraph">O tzatziki é encontrado na culinária do sudeste da Europa e do Oriente Médio. Portanto, se você já esteve em algum país das regiões do Mediterrâneo e do Oriente Médio, sabe que o iogurte natural é um item básico para todos os lares. </p>



<p class="wp-block-paragraph">O tzatziki grego autêntico é feito com mais frequência com iogurte de ovelha ou cabra, mas a minha receita de tzatziki exige iogurte grego integral de leite de vaca. É mais fácil de encontrar no mercado e ainda tem a consistência cremosa e grossa que você deseja no molho tzatziki. </p>



<p class="wp-block-paragraph">Portanto, o tzatziki pode ser usado como molho para salada, molho para uma travessa de queijo ou molho para sanduíche. E por isso digo que o molho Tzatziki é o meu acompanhamento preferido!</p>

<h2 class="wp-block-heading"><strong>INGREDIENTES</strong> <strong>PARA A RECEITA DE TZATZIKI</strong></h2>



<p class="wp-block-paragraph">Uma receita autêntica de Tzatziki &#8211; Molho de Iogurte requer alguns ingredientes simples. Você precisará de:</p>



<ul class="wp-block-list"><li><strong>Pepino japonês</strong> – É melhor obter um pepino japonês em vez de um pepino comum, por causa de sua casca mais fina e sementes menores. Dessa forma, você pode descascar e ralar todo o pepino sem precisar remover as sementes! Pepinos comuns tendem a ter peles muito grossas e cerosas, enquanto as sementes são muito grandes e amargas.</li><li><strong><a href="http://chefinhanatural.com.br/como-fazer-iogurte-caseiro-regular-e-grego/">Iogurte grego natural integral</a></strong> – É mais espesso do que outros tipos de iogurte e dará a você um molho tzatziki rico e cremoso, o que faz valer a gordura extra. Obviamente, você pode usar uma versão com pouca gordura ou sem gordura, mas observe que o molho tzatziki não será tão delicioso e cremoso, mas ainda fará o trabalho.</li><li><strong>Suco de limão</strong> – Suco de limão espremido na hora ilumina o molho tzatziki. O vinagre de vinho branco funciona como um bom substituto, se é tudo o que você tem em mãos.</li><li><strong>Alho</strong> – Este molho de iogurte e pepino inclui alho cru. Portanto, use o alho mais fresco possível. </li><li><strong>Sal + pimenta do reino</strong> – Tempere de acordo com a receita, depois prove e ajuste ao seu gosto no final.</li><li><strong>Endro fresco</strong> – Simplesmente adoro endro fresco. É uma erva com a qual cresci na Polônia, já que a usamos em praticamente qualquer coisa. Mas acho que não é tão popular aqui no Brasil (pelo menos aqui no Sul). Se você não encontrar o endro fresco ou não apreciar o sabor, use uma quantidade igual de hortelã ou salsinha ou omita completamente.</li></ul>

<h2 class="wp-block-heading"><strong>COMO FAZER <strong>TZATZIKI</strong></strong> &#8211;<strong> MOLHO DE IOGURTE?</strong></h2>



<p class="wp-block-paragraph">Experimentei o Tzatziki pela primeira vez em restaurantes gregos e gostei tanto, que tive que aprender a fazê-lo em casa. Veja agora como você pode fazer este molho incrível:</p>



<ul class="wp-block-list"><li><strong>Comece ralando o pepino</strong>. Eu uso os maiores orifícios do ralador para dar muitos pedaços verdes a textura final do molho tzatziki.</li><li><strong>Em seguida, esprema a água do pepino ralado</strong>. Esta etapa é essencial para obter um tzatziki cremoso – se você pular, a água do pepino fará com que o molho se separe. Esprema o pepino diretamente sobre a pia ou pressione-o levemente entre a toalha de cozinha ou de papel.</li><li><strong>Em uma tigela, misture o iogurte, suco de limão, alho, sal e pimenta. </strong>Usando uma espátula, dobre o pepino e o endro. Transfira para uma tigela. Se tiver tempo, cubra com plástico e deixe descansar na geladeira por algumas horas antes de servir.</li></ul>

<h2 class="wp-block-heading"><strong>COMO FAZER O TZATZIKI MAIS GROSSO?</strong></h2>



<p class="wp-block-paragraph">Embora o iogurte grego seja mais espesso que o iogurte comum, você pode coar para obter um molho tzatziki ainda mais espesso. Para fazer isso, basta colocar algumas camadas de tecido de gaze (ou algumas camadas de papel toalha) em uma peneira de malha fina sobre uma tigela. </p>



<p class="wp-block-paragraph">Em seguida, adicione o iogurte grego, cubra com as pontas da gaze e coloque na geladeira. Deixe coar por pelo menos 1 hora ou até a noite. Observe que quanto mais tempo você permitir que o iogurte grego coe, mais espesso ele ficará.</p>



<p class="wp-block-paragraph">Coe também o pepino antes de misturar com o molho de iogurte, pois isso produzirá um tzatziki mais espesso.</p>



<h2 class="wp-block-heading"><strong>DICAS PARA FAZER O MOLHO <strong>TZATZIKI</strong></strong></h2>



<ul class="wp-block-list"><li><strong>Verifique se o pepino ralado está bem drenado.</strong> Se tiver tempo, você pode escorrê-lo em gaze ou em uma peneira de malha fina durante a noite. Eu prefiro a peneira, pois você pode usá-la repetidamente. Se estiver com pressa, use as mãos para espremer o líquido do pepino.</li><li><strong>Para obter melhores resultados</strong>, combine todos os ingredientes, exceto o pepino e o endro. Deixe descansar durante a noite na geladeira enquanto o pepino estiver drenando.</li><li><strong>Quanto mais tempo o alho repousar no iogurte</strong>, mais suave será o sabor.</li><li><strong>Adicione o endro somente antes de servir,</strong> para não sobrecarregar o restante dos sabores.</li></ul>

<p class="wp-block-paragraph">Deseja mudar as coisas e torná-lo seu? Bem, uma receita caseira de molho tzatziki pode ser feita de várias maneiras. Aqui estão algumas idéias que você pode tentar:</p>



<ul class="wp-block-list"><li><strong>Sem endro</strong>: Se você não é fã de endro, simplesmente omita a erva completamente ou substitua por salsinha.</li><li><strong>Sem alho</strong>: O alho cru pode ter um sabor muito forte para alguns. Sinta-se à vontade para reduzir o alho a 1 dente de alho ou omita.</li><li><strong>Com hortelã</strong>: Hortelã seria uma adição maravilhosa. Você pode substituir o endro ou adicionar uma quantidade igual de hortelã fresca a este molho tzatziki.</li><li><strong>Sem pepino</strong>: Embora seja usado o pepino para fazer o molho tzatziki tradicional, você pode omitir. Uma ótima alternativa seria o <a href="http://chefinhanatural.com.br/molho-de-iogurte-grego-para-salada/"><strong>molho para salada de iogurte grego</strong></a>. Você também pode optar por um outro sabor, fazendo um <a href="http://chefinhanatural.com.br/molho-de-iogurte-e-tahine/"><strong>molho de iogurte e tahine</strong> </a>para aprimorar os sabores da cozinha mediterrânea.</li><li><strong>Baixo teor de gordura</strong>: Como mencionado anteriormente, você pode fazer o molho tzatziki usando iogurte de baixo teor de gordura ou sem gordura. Se você decidir torná-lo com pouca gordura, eu recomendaria coar o iogurte para obter uma consistência mais espessa.</li><li><strong>Com creme de leite</strong>: Minha recomendação seria substituir ½ xícara de iogurte grego por creme de leite integral. </li></ul>

No entanto, eu gosto de usar este molho de iogurte com legumes grelhados, palitos de vegetais, chips de pão pita ou bolachas salgadas. Mas para usos mais interessantes e divertidos, você pode usar esta receita de tzatziki como:</p>

<p class="wp-block-paragraph">Tecnicamente, você pode congelar o molho tzatziki, mas depois de descongelado, perde a consistência cremosa. Isso geralmente acontece com a maioria dos molhos à base de iogurte. Portanto, eu não recomendaria congelar o molho tzatziki.</p>

<h2 class="wp-block-heading"><strong>COMO ARMAZENAR O TZATZIKI?</strong></h2>



<p class="wp-block-paragraph">O tzatziki caseiro dura até 3 dias armazenado em um recipiente hermético na geladeira. Sei que isso parece ser pouco tempo, mas prometo que você irá comê-lo em menos de três dias. E se uma porção é demais, você sempre pode reduzir pela metade a receita.</p>



<h2 class="wp-block-heading"><strong>EU TENHO QUE COAR O SUCO DO PEPINO?&nbsp;</strong></h2>



<p class="wp-block-paragraph">A resposta correta é sim. Algumas pessoas chegam a coar o iogurte e pepino em uma peneira forrada com gaze durante a noite na geladeira. Eu acho que é porque eles preferem uma consistência mais espessa. No entanto, na minha opinião, a espessura do Tzatziki é uma preferência pessoal. Se você gosta dele mais líquido, não precisa coar os sucos e vice-versa.</p>



<h2 class="wp-block-heading"><strong>EU TENHO QUE DESCASCAR O PEPINO? </strong></h2>



<p class="wp-block-paragraph">Não. Novamente, é uma preferência pessoal. Pessoalmente, não gosto do sabor amargo da pele do pepino, mas se você gosta, pule essa etapa.</p>
