<p class="wp-block-paragraph">Esta receita de torta de frutas é servida em uma massa sem glúten, crocante, levemente quebradiça e com textura semelhante ao biscoito amanteigado! Recheada com creme de confeiteiro caseiro (cremè pâtissèrie) sem laticínios e decorada com frutas frescas. </p>



<p class="wp-block-paragraph">A torta de frutas frescas é perfeita para qualquer ocasião e com certeza irá agradar a todos! Com esta receita, você poderá fazer uma torta de 25cm ou 14 torteletes de 7cm! </p>

<p class="wp-block-paragraph">Vamos começar com a massa da torta de frutas, que é um pouco diferente das massas clássicas que você está acostumado.</p>



<h2 class="wp-block-heading"><strong>PÂTÉ SUCRÉE (MASSA DOCE DA TORTA DE FRUTAS)</strong>:</h2>



<p class="wp-block-paragraph">As tortas clássicas de creme e frutas frescas não são tradicionalmente servidas em massas feitas de biscoitos, mas sim em uma massa quebradiça ao estilo francês, conhecida como pâté sucrée, que a tradução significa “massa doce”. No entanto, a massa sucrée é bem mais doce que todas as outras massas de tortas. Além disso, ela é um pouco crocante, mais macia que as outras, e muito parecida com a massa de biscoitos amanteigados. </p>



<p class="wp-block-paragraph">Para tornar a massa da torta de frutas sem glúten e low carb, eu mudei um pouco as coisas, mas ainda deixei o sabor, textura e a cara de uma massa doce tradicional tipo pâté sucrée! </p>



<p class="wp-block-paragraph">Para fazer a massa desta torta de frutas, eu usei um mix de farinhas nutritivas e low carb. E ao invés de usar o açúcar, como a massa pâté sucrée tradicionalmente é feita, eu utilizei xilitol, mas não tem problema em usar o açúcar se você quiser. </p>



<p class="wp-block-paragraph">Eu simplesmente queria deixar essa torta o mais saudável possível, para aqueles que não podem ou não querem consumir o açúcar ou quer evita-lo como eu. Sendo assim, qualquer um poderá desfrutar desta torta de frutas frescas com creme de confeiteiro caseiro sem culpa!</p>



<p class="wp-block-paragraph">Muitas receitas usam uma gema de ovo e depois adicionam água gelada, mas encontrei os melhores resultados usando um ovo inteiro e não adicionando água. Este também é um dos casos raros em que recomendo usar um ovo frio, ao invés de usar o ovo em temperatura ambiente. Mantenha todos os ingredientes o mais frio possível, para evitar que as laterais da torta de frutas caiam enquanto assa!</p>

<h2 class="wp-block-heading"><strong>RECEITA DE CREME DE CONFEITEIRO CASEIRO:</strong></h2>



<p class="wp-block-paragraph">Minha receita de creme de confeiteiro caseiro (crème pâtissière) é bem fácil de preparar e rápida de fazer, você não precisa esperar horas para resfriar antes de rechear a torta de frutas ou torteletes. Esse creme de confeiteiro é feito sem laticínios e sem açúcar, e os resultados são exatamente os mesmos do creme tradicional: creme de confeiteiro rico em sabor, cremoso e suave!</p>



<p class="wp-block-paragraph">Para a receita de creme de confeiteiro você precisará:</p>



<ul class="wp-block-list">
<li><strong>Leite vegetal</strong>, eu recomendo usar o leite de coco para obter uma textura melhor e mais cremosa, mas leite de amêndoas também funciona.</li>



<li><strong>Xilitol</strong> (ou açúcar, se esta for a sua escolha). Este creme não é excessivamente doce. Sendo assim, você usará apenas uma pequena quantidade de xilitol para deixar os sabores de baunilha e creme se destacarem!</li>



<li><strong>Amido de milho</strong>, ele ajuda a engrossar nosso creme de confeiteiro (crème pâtissière), sem deixá-lo com gosto de farinha ou textura pegajosa, pois isso pode acontecer ao usar a farinha de trigo como espessante. <em><strong>Se você deseja que o creme seja menos firme, pode cortar a quantidade do amido d</strong></em><strong>e milho</strong><em><strong> pela metade</strong></em>.</li>

<h2 class="wp-block-heading"><strong>QUAIS SÃO AS MELHORES FRUTAS PARA ESSA TORTA SEM GLÚTEN?</strong></h2>



<p class="wp-block-paragraph">Você pode usar praticamente qualquer fruta que desejar para decorar a torta de frutas, mas se estiver usando uma fruta particularmente suculenta (como fatias de pêssego maduro ou manga), recomendo decorar a torta um pouco antes de servir.</p>

<h2 class="wp-block-heading"><strong>ACABAMENTO BRILHOSO NO TOPO DA TORTA DE FRUTAS:</strong></h2>



<p class="wp-block-paragraph">Depois de montar a sua torta de frutas, você pode pincelar levemente as frutas com um pouco de mistura feita com gelatina e xilitol ou agar agar. Esta etapa é totalmente opcional, mas isso adiciona um brilho lindo e uma boa dose extra de doçura levemente azeda. Muitas padarias adicionam uma cobertura às frutas dessa maneira.</p>



<h2 class="wp-block-heading"><strong>COMO FAZER A TORTA DE FRUTAS FRESCAS COM CREME DE CONFEITEIRO&nbsp;(CREMÈ PÂTISSÈRIE)?</strong></h2>



<h3 class="wp-block-heading"><strong>Para fazer a base da torta de frutas:</strong></h3>



<ol class="wp-block-list" type="1">
<li>Misture todos os ingredientes secos, exceto xilitol, corte a manteiga em pedaços&nbsp;e junte aos secos. Com as pontas dos dedos, misture até&nbsp;obter uma farofa úmida.</li>
</ol>



<ol class="wp-block-list" type="1" start="2">
<li>Adicione os ovos levemente batidos, o extrato de baunilha, o xilitol e as raspas do limão na mistura de farinhas e misture até obter uma massa lisa, mas não é necessário sovar.</li>
</ol>



<ol class="wp-block-list" type="1" start="3">
<li>Abra a massa com auxílio dos dedos, direto na forma que você vai assar. Mas você também pode&nbsp;abrir a massa com um rolo, use filme plástico na bancada e em cima da massa. Transfira para uma forma de 25 cm de diâmetro, de fundo removível ou forminhas menores de 7cm de diâmetro e fundo removível. </li>



<li>Use um garfo para furar o fundo em alguns pontos. Para a massa não subir enquanto estiver assando, você pode forrar a torta com papel manteiga amassado e colocar feijão por cima, mas isso é opcional. Leve para assar, forno a 180° por 15 a 20 minutos e&nbsp;deixe esfriar.</li>
</ol>

<h3 class="wp-block-heading"><strong>Para fazer o creme de confeiteiro (crème pâtissière) da torta de frutas:</strong></h3>



<ol class="wp-block-list" type="1">
<li>Numa tigela, coloque as gemas dos ovos e adicione o xilitol. Em seguida, com ajuda de um fue ou batedeira, bata até obter um creme liso e esbranquiçado, peneire o amido de milho sobre as gemas, misture e reserve.</li>



<li>Em uma panela coloque o leite de coco, adicione o sabor que você escolheu usar, seja: baunilha, cumaru, cardamomo ou cascas de cítricos. Cozinhe em fogo bem baixo até começar a levantar a fervura e desligue.&nbsp;</li>



<li>Adicione um pouco deste leite aromatizado à mistura de ovos para temperá-los, retorne tudo na panela com o leite e cozinhe em fogo baixo mexendo sem parar, assim que a mistura começar a ferver, cozinhe por mais 3 minutos e desligue.&nbsp;</li>



<li>Espere alguns minutos para o creme esfriar um pouco e em seguida coloque o creme na massa da torta fria. Cubra a superfície com um filme plástico, encostando no creme, e leve para gelar por 1 hora. (Você também pode deixar o creme esfriar numa tigela e cobrir a torta com creme antes de servir!)</li>



<li>Depois de resfriar, adicione as suas frutas favoritas e finalize com acabamento brilhoso.</li>

<li>5ml (1 colher de chá) de Extrato de baunilha </li>

<li>Em uma vasilha, hidrate as folhas de gelatina em água fria por aproximadamente 5 minutos.</li>



<li>Em uma panela coloque a água, xilitol, as raspas de laranja, as raspas de limão e cozinhe em fogo médio até começar a ferver e os cristais do xilitol se dissolverem, e desligue. Adicione o extrato de baunilha e deixe esfriar por 5 minutos.</li>



<li>Esprema o excesso de água das folhas da gelatina e adicione a calda, mexa até que elas dissolvam, coe e reserve para fazer o acabamento do topo da torta de frutas.</li>
</ol>

<li>Ligue em fogo baixo e cozinhe até que a calda fique em ponto de fio, ou seja, quando levantamos a colher e a calda não goteje, mas forme um fio ao cair.</li>



<li>Pincele sobre as frutas delicadamente.</li>

<h2 class="wp-block-heading"><strong>COMO FAZER O CREME AZEDO &#8211; MOLHO SOUR CREAM MEXICANO?</strong></h2>



<p class="wp-block-paragraph">Antes de experimentar esta receita, eu realmente não tinha ideia de como o molho sour cream era feito. Bem, acontece que o nome diz tudo, porque é literalmente creme de leite em conserva. Ao contrário de outros produtos lácteos caseiros, esse método do creme azedo não requer cozimento e muito pouco esforço. Sendo assim, para fazer o meu molho sour cream caseiro, tudo o que você precisa é de um pote limpo, leite, creme de leite e suco de limão fresco. Ah, e um pouco de tempo, porque você deve deixá-lo coberto na bancada durante a noite para fermentar, então certifique-se de fazê-lo com antecedência. E é isso!</p>



<p class="wp-block-paragraph">Depois de misturar todos os ingredientes, eles farão o trabalho para você, pois o ácido do limão reage com o creme de leite. Depois de uma noite no balcão, mexa bem a mistura e pronto. Não há diferença entre este creme azedo caseiro e o creme azedo comprado no mercado, tornando-a uma receita incrível de ter à mão!</p>

<p class="wp-block-paragraph">A consistência da minha receita de molho sour cream pode ser um pouco mais líquida do que algo comprado no mercado, mas não se preocupe, pois fornecerá o mesmo sabor e umidade na preparação das suas receitas. A razão para isso, é porque na minha receita caseira não existe a adição de espessantes artificiais ou agentes gelificantes que são frequentemente adicionados às marcas comercializadas.</p>

<h2 class="wp-block-heading"><strong>COMO ARMAZENAR O CREME AZEDO &#8211; MOLHO SOUR CREAM MEXICANO?</strong></h2>



<p class="wp-block-paragraph">Como não adicionamos nenhum tipo de conservantes ao creme azedo, convém armazená-lo em um recipiente hermético na geladeira. Dito isto, deve durar umas boas 2 semanas! </p>



<p class="wp-block-paragraph">Eu não recomendo congelar o molho sour cream porque ele tende a se separar quando congelado, deixando o molho com uma textura desagradável.</p>

<p class="wp-block-paragraph">O creme azedo é um ingrediente muito importante quando se trata de panificação. Ele serve para muitos propósitos, como substituto de ovo, deixa os bolos com um sabor mais rico e, por conter ácido, ele reage com agentes de fermentação, como bicarbonato de sódio, que amacia o glúten, assim produzindo bolos incrivelmente macios e úmidos. Além disso, você pode até substituir produtos lácteos com alto teor de gordura, como creme de leite, leite integral e iogurte por creme azedo ao assar. <li>Não tente usar o creme de leite com baixo teor de gordura ou o sour cream ficará muito fino.</li>



<li>Você pode adicionar sabores diferentes ao molho sour cream quando estiver pronto, como alho, cebola em pó e cebolinha para fazer um molho cremoso de cebola ou raspas de frutas cítricas para assar.</li>



<li>Ao cobrir o creme azedo para fermentar, ele ainda deve ser capaz de respirar. Sendo assim, use uma gaze ou um papel toalha ou um pedaço de pano de cozinha.&nbsp; Não feche com uma tampa sólida.</li>



<li>Se você tiver em mãos o creme de leite e leite orgânico, use-os para obter o melhor sabor.</li>



<li>Embora você não deva usar uma tampa hermética enquanto o creme azedo estiver fermentando, portanto, quando estiver pronto, mantenha-o bem fechado na geladeira.</li>



<li>Se você adquirir o hábito de fazer o seu próprio molho sour cream, isso o torna muito mais econômico e saudável do que qualquer versão comprada no mercado.</li>
