<p class="wp-block-paragraph">Essa é uma das minhas receitas favoritas, porque para mim, o brownie tem que ter muito chocolate e ficar molhadinho por dentro, mas com a casquinha seca e crocante por fora. Por isso te convido a fazer essa receita, porque esse brownie fit e sem glúten é muito gostoso e achocolatado!</p>



<h2 class="wp-block-heading">INGREDIENTES PARA A RECEITA DE BROWNIE FIT E SEM GLÚTEN</h2>



<h3 class="wp-block-heading">BROWNIE:</h3>



<p class="wp-block-paragraph">Os ingredientes para o brownie fit são bem simples: ovos, farinha, cacau e açúcar. Pra mim o brownie tem que ter uma casquinha por fora, por isso que nessa receita optei por fazer o uso do açúcar de coco de forma reduzida, isso se comparado com outras preparações de brownie (40% menos que a receita de brownie tradicional). </p>



<p class="wp-block-paragraph">O açúcar de coco é uma opção mais natural e saudável e tem um índice glicêmico mais baixo do que o açúcar comum. Isso significa que o açúcar de coco terá um impacto menor no nível de glicose no sangue. E para a farinha, eu escolhi usar apenas farinha de nozes e cacau em pó, sem nenhum mix de farinhas, para manter essa receita baixa em carboidratos.</p>



<h3 class="wp-block-heading">TRUFA:</h3>



<p class="wp-block-paragraph">A trufa é uma combinação simples de chocolate e creme de castanhas de caju, que é feito com castanhas de caju demolhadas por 8 horas, água e mel. Para tornar esta trufa&nbsp;ainda melhor, ela é infundida com suco de laranja para obter um sabor ainda mais rico.</p>



<p class="wp-block-paragraph">Usei chocolate amargo 70%, tanto no brownie, quanto na trufa, pois gosto do sabor intenso do chocolate.</p>

<h2 class="wp-block-heading">COMO FAZER O BROWNIE FIT E SEM GLÚTEN</h2>



<h3 class="wp-block-heading">BROWNIE:</h3>



<ol class="wp-block-list" type="1">
<li>Derreta o chocolate com óleo de coco em banho-maria e reserve.</li>



<li>Misture a farinha de nozes junto com o cacau e reserve.</li>



<li>Coloque os ovos e o açúcar de coco numa tigela e com a ajuda de uma batedeira, bata muito bem até obter um creme bem fofo e este ter dobrado de tamanho. Reserve.</li>



<li>Adicione o chocolate derretido já frio a mistura dos ovos. Misture bem, em seguida adicione a mistura de farinha de nozes e cacau, mexa levemente e cuidado para não perder a aeração nesse momento.</li>



<li>Unte a forma com óleo de coco e recorte para base dessa forma um pedaço de papel manteiga e adicione a massa na forma.</li>



<li>Leve para assar no forno pré-aquecido a 180 graus por aproximadamente 15 minutos ou quando você observar a formação daquela casquinha.</li>



<li>&nbsp;Retire e deixe esfriar na forma.</li>
</ol>



<p class="wp-block-paragraph">Para retirar o papel manteiga que foi usado para forrar a forma, sem quebrar o brownie, eu utilizei a seguinte técnica: coloquei um prato por cima do brownie, virei o brownie fit de cabeça pra baixo e retirei o papel. Depois coloquei o prato que iria usar para servir o brownie fit e virei novamente, e retirei o prato por cima do brownie fit.</p>

<h3 class="wp-block-heading">CREME DE CASTANHAS DE CAJU:</h3>



<p class="wp-block-paragraph">Para fazer o creme de castanhas de caju, coloque todos os ingredientes (castanhas demolhadas, água e mel) no liquidificador e bata. Vamos usar esse creme na próxima etapa, que é a trufa!</p>



<h3 class="wp-block-heading">TRUFA:</h3>



<ol class="wp-block-list" type="1">
<li>Reduza o suco da laranja e reserve.</li>



<li>Em uma panela coloque o creme de castanha de caju e adicione as raspas de laranja, cozinhe até levantar a primeira fervura e desligue.</li>



<li>Tampe a panela e deixe em infusão por 10 minutos.</li>



<li>Adicione a redução do suco de laranja ainda quente (caso não esteja mais quente, será necessário fazer uma leve fervura) no creme de castanhas e adicione o chocolate não derretido nesta mistura de creme de castanhas com a redução de laranja ainda quente. Não misture por pelo menos cinco minutos para depois facilitar a emulsão dessas gorduras.</li>



<li>Depois de 5 minutos, misture tudo até o chocolate ter ficado completamente derretido.</li>

<li>Quando você for adicionar o chocolate derretido ao ovos, é bem importante que o chocolate esteja frio para que não coagule os ovos, então tome cuidado nessa parte do processo! Você não quer acabar com ovos mexidos na sua mistura de chocolate!</li>



<li>Recomendo usar o chocolate 70% de cacau, por ter um menor teor de açúcar e por conter mais flavonoides (fitonutrientes encontrados no cacau), que têm efeitos antioxidantes. No entanto, se você quiser, pode usar o chocolate ao leite ou chocolate meio amargo para obter um sabor de chocolate mais doce e menos intenso.</li>



<li>Para que este brownie fit tenha a casquinha externa, é fundamental o uso de algum tipo de açúcar, nesta preparação coloquei 120g de açúcar de coco (brownie light em açúcar ou seja com redução de 40% se comparado com uma receita tradicional + farinhas low carb). </li>



<li>Como já mencionei, optei por usar açúcar de coco por ser uma opção mais natural e saudável e ele tem um índice glicêmico mais baixo do que o açúcar comum. No entanto, fique à vontade para usar um outro tipo de açúcar, se quiser!</li>



<li>Optei por usar somente farinha de nozes e cacau em pó para preparação dessa receita. As nozes são excelentes fontes de vitamina B6, uma vitamina muito importante para o humor e bem estar que melhora a nossa resposta frente ao estresse. </li>



<li>Nesta receita de brownie fit, a sinergia entre o cacau e as nozes melhoram o humor e a concentração, sendo um excelente lanche para o meio da tarde, pois proporciona àquela disposição para finalizar o dia.</li>



<li>É importante deixar as Castanha de Caju de remolho por pelo menos 8 horas para diminuir os fatores antinutricionais, pois eles atrapalham a nossa digestão. Além disso, facilita em tornar as castanhas de caju em um creme liso.</li>

<h2 class="wp-block-heading">ARMAZENAMENTO DO BROWNIE FIT E SEM GLÚTEN</h2>



<p class="wp-block-paragraph">Armazene o brownie fit com trufa em temperatura ambiente por 1 dia ou na geladeira por até 5 dias. Os pedaços de brownie fit também podem ser congelados por até 3 meses. </p>



<p class="wp-block-paragraph">No entanto, depois de congelados, eu recomendo descongelar na geladeira durante a noite e no dia seguinte os deixe à temperatura ambiente. Eu gosto de comer o brownie fit um pouco aquecido, então antes de comê-lo eu o aqueço no micro-ondas por 10-20 segundos.</p>

<p class="wp-block-paragraph">Brownie vem em muitas formas, mas ele não é como bolo ou biscoitos. No entanto, é frequentemente descrito como sendo denso, macio e bem doce. Aquele brownie seco que mais parece um bolo não é feito do modo original, portanto não fica tão saboroso. </p>



<p class="wp-block-paragraph">Esse doce ficou conhecido no mundo todo e foi criado nos EUA, é um tipo de bolo que não cresce, é úmido por dentro e tem um sabor puro de chocolate!</p>



<h2 class="wp-block-heading" id="o-que-faz-o-brownie-perfeito"><strong>O QUE TORNA ESTE BROWNIE PERFEITO?</strong></h2>



<p class="wp-block-paragraph">Com as milhares de receitas de brownie que existem, pode ser difícil encontrar a sua versão do brownie perfeito. É uma questão de preferência pessoal, mas para mim, um bom brownie, é aquele que fica molhadinho por dentro e por fora fica com aquela casquinha seca e crocante.</p>



<p class="wp-block-paragraph">Acima de tudo este brownie não é apenas super gostoso, fácil de fazer e fica pronto para comer em cerca de 15 minutos. Depois de retirá-lo do forno (tomando cuidado para não se queimar), cada brownie vem cheio de pedaços de chocolate derretido por toda parte. </p>



<p class="wp-block-paragraph">Ele fica incrivelmente úmido no dia seguinte, permanece úmido após congelado e também fica úmido após armazenado na geladeira por até uma semana.</p>

<p class="wp-block-paragraph"><strong>Etapa 2</strong>: Peneire a farinha, o cacau em pó e o sal. Misture delicadamente os ingredientes secos com os ingredientes úmidos, APENAS até incorpora-los (NÃO bata demais, pois isso afeta a textura). Adicione ¾ dos pedaços de chocolate.</p>



<p class="wp-block-paragraph"><strong>Etapa 3</strong>: Despeje a massa na forma preparada, alisando a parte superior uniformemente e cubra com os pedaços restantes de chocolate. Asse por 23 a 30 minutos para ter o brownie mal cozido (textura mais molhada por dentro e por fora fica aquela&nbsp;casquinha seca e crocante) ou até o centro do brownie não tremer mais e ficar APENAS assado para o toque*.</p>

<p class="wp-block-paragraph">Aqui foi aonde as coisas ficaram interessantes durante os testes. Usei três assadeiras diferentes e todas ficaram perfeitas. Tudo depende da sua preferência de espessura:</p>



<ol class="wp-block-list"><li>Para ter o brownie mais grosso (cerca de 5cm de espessura), eu usei uma assadeira de 18cm x 28cm. Cozidos por 40 a 45 minutos, produziu uma consistência levemente irregular (mais molhado no centro e assado nas bordas).</li><li>Uma assadeira de 23cm x 33cm, resultando em um brownie mais fino (cerca de 2cm) e consistência uniforme. Cozido por cerca de 18 minutos. Textura perfeita, mas eu prefiro pedaços um pouco mais grossos.</li><li>Para o meu brownie favorito (com 3cm de espessura) eu usei uma assadeira de 20cm x 30cm. Assado por menos de 25 minutos produziu o brownie perfeito, com resultado na espessura e consistência certa, enquanto ainda pegajoso.</li></ol>



<p class="wp-block-paragraph">O cheiro que sai de seu forno será um paraíso puro de chocolate. Sua casa terá um cheiro incrível por horas após o cozimento.</p>



<p class="wp-block-paragraph">Aguarde cerca de 15 minutos para fatiá-lo ou até uma hora. Quanto mais você esperar, mais ‘firmes’ ficaram os pedaços do brownie e a massa afundará em si mesma antes de cortar.</p>

<h2 class="wp-block-heading" id="dicas"><strong>DICAS PARA A RECEITA DO MELHOR BROWNIE DO MUNDO</strong></h2>



<ol class="wp-block-list"><li><strong>Não bata demais a massa depois que a farinha e o cacau forem adicionados.</strong> Isso cria bolsas de ar na massa, dando a você o brownie com textura de bolo.</li><li><strong>Por favor, tente não assar demais.</strong> Eu gostei do meu brownie assado exatamente por 23 minutos em uma assadeira de 20 cm. Você pode ir um pouco mais além, se preferir, mas eu não recomendo se você estiver procurando pelo brownie mais gostoso do mundo. Lembre-se, ele continuará a assar levemente na assadeira quente depois de retirado do forno. Eu uso papel manteiga para poder tirá-lo da assadeira.  Depois de 10 a 15 minutos de descanso, retire o brownie delicadamente da assadeira junto com o papel manteiga e o coloque em uma tábua para cortá-lo.</li><li><strong>Eu asso o meu brownie na prateleira superior do meu forno</strong>. A prateleira do meio os cozinha muito mais rápido, os queima ligeiramente na parte superior e os seca um pouco. O seu forno pode funcionar de forma diferente.</li></ol>



<h2 class="wp-block-heading" id="como-armazenar-os-brownies"><strong>COMO ARMAZENAR OS BROWNIES?</strong></h2>



<p class="wp-block-paragraph">Armazene os brownies em temperatura ambiente por 3 dias ou na geladeira por até 7 dias. Os pedaços de brownie também podem ser congelados por até 3 meses. Descongele na geladeira durante a noite e no dia seguinte os deixe à temperatura ambiente. Eu gosto de comer ele um pouco aquecido, então antes de comê-lo eu o aqueço no micro-ondas por 10-20 segundos.</p>



<p class="wp-block-paragraph">Cada ingrediente é medido e pesado para facilitar o cozimento! O melhor e mais gostoso brownie do mundo realmente faz jus ao seu nome.</p>
